In the old days as yeast was not available, natural fermentation took place. The bread then was formed into balls, flattened and baked in a clay oven. At Danny’s Real Pita Bread Company we follow the authentic way of making pita, with the exception that we do not use a clay oven. We use simple ingredients in a recipe that has stood the test of time. We regularly inspect our ingredients for their quality and our product is freshly delivered to all supermarket chains immediately after baking.
Regarding the clay oven, this one was changed to a brick oven to create an authentic baking conditions.

Pita Bread, like all bread, is best fresh, but it will keep well in its plastic bag for two days. Because we do not use any preservatives or emulsifiers it is best to freeze your pita bread immediately after purchase and take out just what you need. It thaws quickly within 15 minutes, or it can be put in the microwave for about 30 seconds. The best way to get your Pita Bread crispy is to toast it for a few minutes or heat it up in the oven. We also provide Pita Bread in a vacuum container. It stays fresh for longer and is ideal for you to take away on holiday. It can also be frozen and used in the same way as the bagged Pita Bread.

Making Pita

Pita bread has been made for thousands of years and has been part of the staple diet of people in many parts of the world.

Pita bread is made from basic ingredients and this is what makes it not only full of taste but also healthy.

The production of pita bread with the healthiest ingredients is what we strive to achieve in Danny’s Real Pita Bread Company. To achieve the classic flavour and texture in our pita bread we carefully select only high-quality premium flour, which provides the base for the taste and structure of the pita. The flour has to be of a grade that ensures the pita bread has the structural strength, flexibility, perfect shape and, of course, the taste that our customers have come to expect from our pita bread. The rest of the ingredients are quite simple: fresh yeast, salt and a bit of sugar to feed the yeast.

WE DO NOT USE ANY STABILISERS, IMPROVERS OR ANY OTHER ARTIFICIAL INGREDIENTS!

We pride ourselves on producing a naturally fermented, kosher bread.

The secret is in the timing, temperature and gentle handling, not in artificial baking aids. We mix the dough gently in slow speed mixers that imitate hand kneading.

After mixing we cut the dough to the right weight and round it into perfectly shaped balls that we allow to raise naturally. The weight of the dough balls determines the size of the pita being made. Our pita is available in large, medium and small sizes in a range of different flavours.

After the rounding process, we flatten these balls to a circular shape similar to a pizza base. At that stage each piece of pita dough is inspected and any misshapen ones are rejected. Then the pita enters a high temperature oven that instantly cooks the pita and creates the 'pocket effect'.

The hot, puffed pita comes out of the oven to a cooling system where it cools to the pocket shape we are all familiar with. Finally the pitas are sorted by skilled packers, who reject those pitas that 'escaped' the previous inspection. The bread is then carefully placed into our familiar plastic bags with the oval logo and tags for resealing. When was the last time you ate Real Pita Bread?
